National Dessert Month, with and without pumpkin spice

It’s October. It’s National Dessert Month. We’ve found two recipes to satisfy your fall dessert cravings. (And, yes, one of them has pumpkin spice.)

 

 

Double Apple Crumble

 

Ingredients

5 cups sliced and peeled apples (about 2 pounds)

3 tablespoons apple butter

1/4 cup all-purpose flour

1/4 cup regular oats, uncooked

1/4 cup packed light brown sugar

1 teaspoon ground cinnamon

1/8 teaspoon salt

3 tablespoons chilled butter

1/3 cup chopped pecans

Cooking spray

 

Directions

  1. Heat oven to 375 °F.
  2. Combine apples and apple butter. Place in 8-inch square baking pan coated with cooking spray. Press down lightly to compact.
  3. Combine flour, oats, sugar, cinnamon, and salt in a bowl.
  4. Cut in butter using pastry blender or 2 knives until mixture resembles coarse meal.
  5. Stir in pecans. Sprinkle mixture over apples.
  6. Bake for 45 minutes or until bubbly and golden brown.

Mini Spiced Pumpkin Cupcakes

 

Ingredients

3/4 cup whole-wheat pastry flour

3/4 teaspoon baking powder

1/8 teaspoon baking soda

1 teaspoon pumpkin pie spice

1/4 teaspoon salt

4 tablespoons unsalted butter, room temperature

1/4 cup packed dark brown sugar

1 large egg

1/2 cup steamed pumpkin, canned or pureed

1/4 cup plain yogurt

 

Frosting

4 tablespoons unsalted butter, room temperature

6 ounces reduced-fat cream cheese, room temperature

1/4 teaspoon vanilla extract

1 cup confectioners’ sugar

Pinch of salt

 

Directions

  1. Heat oven to 375 °F. Line 24 mini muffin cups with paper liners.
  2. In a bowl, whisk the first five ingredients.
  3. In a separate bowl, beat butter and sugar until light using an electric mixer.
  4. Whisk eggs and pumpkin in a bowl, then beat into butter mixture.
  5. With mixer on low speed, add flour mixture and yogurt alternately, beginning and ending with flour.
  6. Spoon 1 heaping tablespoon of batter into each muffin cup.
  7. Bake 12 to 15 minutes. Let cool.
  8. For frosting: Beat all ingredients with an electric mixer for 3 minutes until light. Spread onto cupcakes.
