From the kitchen of Dr. Matthew A. Schmidt

Working as a cardiologist can be challenging, so there’s nothing better than unwinding in the kitchen and preparing something tasty.
This fresh, healthy recipe is one of my go-to game-day snacks.
It’s also something you could prepare as an appetizer when entertaining guests.
Tomato and Mozzarella Rounds
4 firm tomatoes
1 small package sliced fresh mozzarella cheese
1 package fresh basil
1 package fresh chives
1 red onion
2 cloves garlic
Fresh ground pepper
Mince red onion, chives and garlic. Toss with pepper to taste, then set aside. Slice tomatoes and arrange on platter. Layer each tomato with a basil leaf and a slice of mozzarella. Spoon onion mixture onto each stack. Top with fresh ground pepper.
